🥐🥬 Spinach & Feta Puff Pastry Pie

🧾 Ingredients

  • 1 sheet puff pastry (thawed)
  • 300–400g spinach (fresh or frozen, well drained)
  • 150g feta cheese (crumbled)
  • 1 small onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1–2 tbsp olive oil
  • 1 egg (for egg wash)
  • Salt & black pepper
  • Optional: pinch of nutmeg or chili flakes

👩‍🍳 Instructions

1. Cook the filling

  • Heat olive oil in a pan
  • Sauté onion until soft
  • Add garlic and cook briefly
  • Add spinach and cook until wilted (or heated through if frozen)
  • Season with salt, pepper, and optional nutmeg/chili
  • Let it cool slightly, then mix in feta cheese

2. Prepare pastry

  • Roll out puff pastry on a baking tray
  • Lightly score a border (don’t cut all the way through)

3. Assemble

  • Spread spinach-feta mixture in the center
  • Fold edges slightly or leave open-faced

4. Bake

  • Brush edges with beaten egg
  • Bake at 200°C (400°F) for 20–25 minutes
  • Bake until golden and puffed

  • Make sure spinach is well drained to avoid soggy pastry
  • Add ricotta for a creamier filling
  • Sprinkle sesame seeds on edges for crunch
  • Serve warm or at room temperature
