Here’s a classic recipe for Burfee (Barfi)—a rich, melt-in-the-mouth South Asian sweet made with milk solids and sugar:


🍬 Burfee (Milk Fudge)

🧾 Ingredients

  • 2 cups milk powder (or khoya/mawa for traditional version)
  • 1 cup sugar
  • ½ cup milk
  • ¼ cup ghee (clarified butter)
  • ½ tsp cardamom powder
  • 2–3 tbsp chopped nuts (pistachios, almonds)

👩‍🍳 Instructions

1. Prepare the mixture

  • In a pan, heat milk and sugar on low heat until sugar dissolves.

2. Add milk powder

  • Stir in milk powder gradually, mixing continuously to avoid lumps.

3. Cook

  • Add ghee and cook on low heat, stirring constantly.
  • The mixture will thicken and start leaving the sides of the pan.

4. Flavor

  • Add cardamom powder and mix well.

5. Set

  • Grease a tray with ghee.
  • Spread the mixture evenly and smooth the top.

6. Garnish & cool

  • Sprinkle chopped nuts on top and press lightly.
  • Let it cool completely, then cut into squares or diamonds.

  • Cook on low heat to avoid burning.
  • If using khoya, skip milk powder and reduce milk.
  • Add saffron for a richer flavor.
  • Don’t overcook or it will become hard.
