Blueberry Biscuits

🫐🍪 Blueberry Biscuits (Soft & Fluffy Southern-Style)

These blueberry biscuits are tender, slightly sweet, and packed with juicy berries—perfect for breakfast or tea time.


🧾 Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2–3 tbsp sugar (more if you want sweeter biscuits)
  • ½ cup cold butter (cubed)
  • ¾ cup milk or buttermilk
  • 1 cup blueberries (fresh or frozen)
  • 1 tsp vanilla extract (optional)

🍯 Optional glaze

  • ½ cup powdered sugar
  • 1–2 tbsp milk or lemon juice
  • ½ tsp vanilla extract

1. Mix dry ingredients

  • In a bowl, combine flour, baking powder, salt, and sugar.

2. Cut in butter

  • Add cold butter cubes
  • Mix with fingers or pastry cutter until crumbly (like coarse sand)

3. Add milk

  • Pour in milk (and vanilla if using)
  • Stir just until dough forms (don’t overmix)

4. Add blueberries

  • Gently fold in blueberries
  • Be careful not to crush them

5. Shape biscuits

  • Drop spoonfuls onto a baking tray OR
  • Lightly shape into rounds for more traditional biscuits

6. Bake

  • Bake at 200°C (400°F) for 15–20 minutes
  • Until golden on top

7. Optional glaze

  • Mix glaze ingredients and drizzle over warm biscuits

  • Use frozen blueberries straight from freezer to avoid bleeding
  • Don’t overmix or biscuits will become dense
