🥩🔥 Prime Rib (Standing Rib Roast)

Prime rib is a juicy, tender beef roast with a flavorful crust and a pink, buttery center when cooked right.


🛒 Ingredients

  • 1 standing rib roast (2–4 ribs, ~2–4 kg)
  • 2–3 tbsp olive oil or softened butter
  • 2 tbsp coarse salt
  • 1 tbsp black pepper
  • 4–6 garlic cloves (crushed or minced)
  • 1 tbsp rosemary
  • 1 tbsp thyme (optional)

👨‍🍳 Method

1. Prep the roast

  • Bring to room temperature (1–2 hours)
  • Pat dry completely
  • Mix oil/butter, garlic, salt, pepper, herbs
  • Rub all over the meat

2. High-heat start (crust)

  • Preheat oven to 220°C
  • Roast for 20 minutes to brown the outside

3. Slow roast

Lower heat to 160°C and cook until desired doneness:

  • 🩷 Medium-rare: 52–55°C internal temp
  • 🟠 Medium: 58–62°C

(Use a meat thermometer for best results.)


4. Rest

  • Remove from oven
  • Cover loosely with foil
  • Rest 20–30 minutes

5. Slice & serve

  • Slice between bones
  • Serve with pan juices or gravy

🔑 Tips

  • Don’t skip resting—it keeps juices inside
  • Always use a thermometer (don’t rely on time alone)
  • Bone-in = more flavor
  • Dry surface = better crust
