🍠🧀 Stuffed Sweet Potatoes

Soft, sweet roasted potatoes filled with a savory (or sweet) filling—easy, filling, and very customizable.


🔥 Basic Method

Ingredients

  • 2 large sweet potatoes
  • 1–2 tbsp olive oil
  • Salt (optional)

👨‍🍳 Step 1: Bake the sweet potatoes

Oven:

  • Heat to 200°C
  • Pierce potatoes with a fork
  • Bake 40–50 minutes until soft inside

Air fryer:

  • 190°C for 30–35 minutes, turning halfway

  • Chickpeas or beans
  • Avocado
  • Lemon juice + olive oil
  • Herbs

🍯 5. Sweet Version

  • Peanut butter or yogurt
  • Honey
  • Banana slices + nuts

🔧 Step 3: Assemble

  1. Slice baked sweet potatoes open
  2. Mash slightly inside
  3. Add filling
  4. Optional: top with cheese and reheat 5 minutes

  • Don’t underbake—soft inside makes stuffing easier
  • A fork should slide in easily
