Here’s a simple, low-carb oven dish with chicken, spinach, and mushrooms—creamy, high-protein, and very filling without being heavy.


🍗🍄🥬 Chicken Spinach & Mushroom Low-Carb Bake

Ingredients

  • 500g chicken breast (cubed or sliced)
  • 2 cups mushrooms (sliced)
  • 2–3 cups spinach
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil or butter
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika or Italian herbs
  • ½ cup cream (or Greek yogurt for lighter option)
  • ½ cup shredded cheese (mozzarella or cheddar)

🔥 Method

1. Prep chicken

  • Season chicken with salt, pepper, paprika
  • Lightly sear in a pan with 1 tbsp oil for 3–4 minutes (optional but improves flavor)

2. Cook veggies

  • In the same pan, add garlic + mushrooms
  • Cook until mushrooms release moisture and shrink
  • Add spinach and cook until wilted

3. Combine

  • Mix chicken, mushrooms, spinach in a baking dish
  • Add cream and stir gently

4. Bake

  • Top with cheese
  • Bake at 200°C for 20–25 minutes until bubbly and golden

🔑 Tips

  • Don’t overcook chicken in the pan—it finishes in the oven
  • Squeeze excess water from spinach if it releases too much liquid
  • Use Greek yogurt instead of cream for a lighter, high-protein version

Easy upgrades

  • Add chili flakes for heat
  • Add mozzarella + parmesan mix for richer topping
  • Serve with cauliflower rice for a full low-carb meal
